Repair holes in the dash left from electronics removal, what's the best way?

I would like to fill some holes left on my dash from the old humminbird that I took out in the fall. Should I go with fiberglass cloth etc... or are there self adhesive plates made for this application. Looking for some options, holes are on the horizontal part of the dash where the displays use to be. Thanks.

Fill them with marine tex or marine epoxy bondo makes a stick type marine epoxy that you cut off a chunk and knead.

The dash is just over 1/8 inch thick where the holes are. If I have a hole that is about two and a half inches wide, what's good to use as a backing so that the filler just doesn't fall through the hole and how should I secure it?
