Your bow and stern eyes are not usually rated to hoist the boat. I would check that carefully.
A proven way is to drop the trailer tongue to the ground, put cement blocks under the transom at the gunwale, pad them with wood, and then jack up the trailer tongue, until the stern is on the blocks. Now put a block stack under the bow, approximately under the console, and pad with wood. Now drop the tongue a bit and the bow should be off the trailer as well.
Go to any boat yard and you will see this kind of blocking.
For my 21 footer, I use two 8" block for the first course, 1 12" block for the second course, and single 8" block for the 2 remaining courses, with a 2X or 5/4 wood as a pad. After blocking it give the boat a good shake to make sure it is secure.
If she falls, she only falls a couple of inches. Use the 6"X 2" foam rollers to paint. They fit between the bunks and hull more easily.
