I think it's kicking back into SLOW MODE. When it dies back down to an idle, I try to go back into full throttle it will sputter.

Did you replace the thermostat, they are cheap.
The thermostat should open at 145 degrees.
A thermostat can be bad, and the tell tail will still flow full blast. The thermostat is after the tell tale..... The head temperature should be around 145 degrees.
You should be able to touch the head and not get burnt.

I actually haven't replaced the thermostat.

I did notice the engine was really cool after running it (maybe for 5 minutes).

I took the thermostat off and found some crud in it.

Ideas?

If it is running cool. I would then test the temperature switch. Your manual would have a test procedure, and I am not sure if a person can unhook it and test it that way.

Is there a warning light glowing on the engine it is located to the right of the front hood release latch?

I took off the whole oil tank and sending unit and directly hooked the fuel line onto the fuel filter (bypassed the whole oil sending unit) and the motor ran perfectly fine at higher RPM's. Seems like the oil sending unit was BAD.

I premixed 50:1 in the fuel cell and everything seemed to run fine. Should I have any concerns?

No I wouldn't have any concerns.

It would be interesting to see which sensor is bad. Was it the no oil in the mixing chamber under the tank or the low oil sensor in the tank. I know the low oil sensor is getting hard to find as they are NLA.

I'm glad it could help you NYGiants!!! And thanks again HIDEF!!! I believe it is the low oil sensor, to be quite frank. I believe the engine was being told that it wasn't getting enough oil, hence why it was shutting itself down.

FYI, I took that stuff off and ran it mostly on faith.... :D
