Re: Pork Ribs?

You can get the loyds(sp) ribs from the Grocery store to taste just like you favorite rib shack. The loyds ribs used to have these direction on them, but then they were dropped -

Preheat oven to 400. Place the rack of ribs on some aluminum foil. Pour a half cup of water on em- and seal the mess in with more aluminum foil. Then wrap in a second layer of foil. Place them in the oven for 1 hour. Your basically steaming them - the meat will fall off the bone.

Maybe not as good a low and slow all day but when you don't have all day to cook...

I have 4 different styles of smokers each one does it's own kind of smoking.
Damn, and people give me crap for having two smokers and a grille.

I should just get one of these:

Alright all these sound mouth watering good ive tried ribs everway it all depeands on how you like them,One of the biggest secrets is to pull the membrane off the back it is very time consuming but it makes a big difference.
The easiest way ive found to do it is acombinatio i have a gas grill so i take a metal pan and put it over the burners and fill it up with hickory chips and turn the heat on low i take my ribs and rub them down with mustard, then i put the ribs in an alumiomn broiler pan and add dales, mustard garlic, cumin, redpeper and anything else, then put beer, applejuice or just water in there with it about an inch of liquid seal the top with foil and put on the grill cook until the meats start pulling up from the bone and almost turns white, then i pull off and take inside and drain the liquid off while its cooling put more smoe chips on and make sure there just smoking not burning if ya need too srinkle with water, then i put whatever dry rub on the ribs real heavy and put back in the grill on the top rack and let them smoke for a couple hours.around here when i say im cooking ribs people come out of the woodwork bring alll the fixens, you need to keep turning them too once the rubs is cooked on then you can put your wet baste or sauce on and let it carmelize.(rember pork dosnt take salt so if you think it needs it do it when there done, but these ribs dont need salt most of the time.
Also for the liquid try anything, a good marinate is bloodymary mixer it has everthing.and if they dont taste good that time cook some more next week.

Re: Pork Ribs?

I like your method Ron, similar to mine, I think the key is not to waste time measuring everything ;)

Lazy mans method of making ultimate ribs...

3 inch deep pan

Pick a rub from above, however I dont mix mine I put mine down in layers.

I put my favorite hot sauce of the day right on the ribs - this has salt in it so I dont add salt.
pepper
granulated garlic
little paprika
brown sugar layer

Put ribs in pan

pour in - dont pour on the ribs (you can use beer but gives it a tangier sauce)
cheap wine ($5 on sale somewhere)
balsamic vinegar
red wine vinegar
worschire (sp)

The ribs are not supposed to be covered only about 1 inch of liquid should be in the pan
cover with foil

place in toaster oven/ oven at 215 for 6 hours

At 530 start grill - charcoal only NO GAS

Get grill good an hot but coals off to side
take out ribs
pour liquid into pot and reduce down - you have to be careful because the liquid has sugar in it and it can burn when it gets low

Put ribs on grill for about 10 minutes to brown them up - do not put ribs over coals as this will burn the sugar real quick - although some people like the char so brown accordingly.

Let sauce cool and it will thicken right up.

Now if you like hotter sauce add some hot sauce to the sauce, if you like sweet bbq then leave it alone. The sauce is tremendous because it has the rib flavor in it from the baisting

Now there is quite a bit to be said about other methods especially where you have to "tend" the fire with a beer in your hand. But this method lets you go out fishing and come back to a great meal.

One other thing is in the summer I put the toaster oven in the garage and do the cooking there, that way I do not heat up the house doing the cooking.

Now some people just dont like boiled ribs, but the ribs dont sit in the liquid they sit above it for the most part.

When you pull the ribs off of the grill they are ready to pull apart and slather with the homemade sauce!

The nice part of this recipe is you can make it anywhere you go, a friends house, vacation, etc

Tomatolord
