Pork Ribs?

For years now I have tried to cook the ultimate pork ribs. I have fallen short. Don't get me wrong, by all accounts they are pretty good but they have fallen short of the tasty, sweet, succulent ribs that you can get at many a restuarant.<br /><br />I have used state of the art rubs, I have, indirect, slow cooked over charcoal with various woods for smoke flavor, but once you get below the skin they just don't measure up.<br /><br />I think the pros marinade them under pressure. What say ya'll?

You nailed it boom. Pressure cook them first in the seasoning of your choice. Makes them fall off the bone too. :)

After a rub of your choice has been on the meat in a fridge for like 2 hrs, you need to cook the ribs in a braising liguid in a 250 degree oven for 2.5 hrs.....<br /><br />then transfer ribs and braising liquid into a saucepan and heat till the liquid gets syrup like......<br /><br />then placy sauced ribs under a broiler until slightly carmelized.<br /><br />Have done this a few times.....the ribs were tasty and tender.

Thanks Boomyal.<br />Now I am hungry for some mouth-watering-fall off the bone-ribs. <br /><br />I used to cook alot(my job), and I used to make 50lbs of ribs in one shot.<br />Same as the above comments. Add your seasoning of your choice and cook in liquid and cook accordingly. <br />Then take them out and put a little liquid in pan and broil them. <br />Guarenteed they will fall off the bone. <br /><br />If this thread keeps going until the weekend....I'm gonna have to gets some ribs.<br />Because there is not a chance I will remember it. :D lol :D

The absolute best ribs I had ever tasted were done with a rub and cooked in a smoker - slow and long. Wow!

i cook mine for sevral hours slowly, 2 to 3 hours into the smoking proccess i take them off and wrap in tin foil after coating them in my bbq souce. cook till done about two more hours and im telling you there juciy and goooood. the whole cooking time is about 5 to 6 hours. i think wraping them in the tin foil brings out the flavor. try it sometimes. you can do this with boston butts also. very tender when done.

low and slow! the only way to smoke ribs, and yes it takes a big pipe! rub down with spices including brown sugar, let em sit for a while and smoke em slow 180* - 220* about 3 hours then wrapem and raise the temp to 250* mopem with sauce if you must but be careful it can burn easy! I sometimes finish them in the oven while I smoke other things,,,,,, a real crowd pleaser!<br />Edit: don't forget to spray them with apple juice each time you look at them!

You're COOKING ribs, which should never be done. They should spend all day in a smoker. I start it around 8am if I plan to have them for dinner. The heat should never directly contact the meat, so an offset firebox is really needed. You could possibly do it with a pile of coal on one side and ribs on the other side of a large grille, but it will never be the same.<br /><br />Bring the smoker up to about 160-170, put in your ribs, then tend the smoker regularly. I picked up a wireless dual thermometer which gives me the smoker temp and meat temp, with alarms for both.<br /><br />I do this with ribs or really any thick cut of meat for perfect results every time. Smoking for 8-10 hours is the only way to cook meat.<br /><br />The marinade is good but not critical. A friend is famous for his "untouched" ribs. He puts absolutely nothing on them before smoking or during. Everybody loves them.

A real good friend of mine that cant get right got a wild hair once and threw a rack-o-ribs in a turkey fryer. Anyone ever had any fried ribs??? I tried it with a rub I'm partial to and I have to tell you they were stomp down good ! ! !

theres too many ways to do it...I've had success with a few. I either marinate them over night and slow cook on the smoker. or I boil them for 10-20 minutes in Italian dressing ( or spanish moho) then grill them with homemade bbq. <br /><br />oddjobs recipe for homemade BBQ:<br /><br />coke or sprite<br />surup, honey or molassas<br />Italian dressing or MOHO<br />horse radish<br />salt and pepper<br />chili power<br />minced onion<br />minced hot pepper ( your choice)<br />Garlic<br />musturd<br />ketsup (sp)<br />left over salsa<br />Soy sauce<br />And anything I didnt think of yet<br /><br />Add more coke, spite, or pepsi and whatever to taste and thickness. You get the idea..<br /><br />I prefer runny sauce myself.<br /><br />I do on occassion use store bought BBQ sauce to start it but add all the above to it.<br /><br />I hope you try making your own sauce cause you <br />cant go wrong.<br /><br />The critical part is the grilling. turn and baste every 2-3 minutes NO MATTER WHAT! or you'll be sorry, laughed at, and made fun of. All the past good deeds will be completely forgotten by your family or guests.<br /> :)

Hello, Rwise has one of the secrets. The brown sugar. Makes them taste like the pros made them. I rub mine down with spices and brown sugar. Make a pouch out of heavy duty aluminum foil (not the thin stuff) Pack the ribs in the foil with about 8 to 10 ice cubes. Throw the whole package out on a covered BBQ at med heat. Cook 'em like that for 15 to 30 minutes. You just want to let them boil a bit in the water that is generated by the melting ice cubes. Than unwrap throw on the grill and baste with BBQ sauce till browned. Makes one heck of a rack of ribs. They really do just fall off the bone. Darn....Now i'm really craving ribs! :D Maybe I'll make some this weekend. :)

efhenry, Mr. Ladyfish makes them like that and they are to die for. They also just take minutes to cook. :)

right now its a $500 fine and a year in jail to BBQ, man I want ribs! might just have to try doing them in the fire place :D <br /><br />Fireship I use any comb of spices that one would use on pork or poultry, and brown sugar of course. Then they get smoked over at least 5 kinds of wood, no charcoal, no gas. I have 4 different styles of smokers each one does it's own kind of smoking.
