Ever heard of cold seizing? That happens when an engine is over-cooled as would be the case running without the valve. The pistons heat up and expand but the cylinders don't because they are over cooled. The resulting piston clearance decreases and there you have it. Don't you think if it was ok to run without a thermostat or the poppet valve the factory would not have designed them into the engine? If the valve is sticking or not functional, why not fix it.
