Pitch question on twin engine CC

I currently fish a 31 Fountain TE off of Atlantic Beach NC. It has twin 250 EFI's with 3 blade 23 pitch props. The boat cruises at 40-42 mph I rarely am able to run that fast off the coast of NC. If I throttle back to 28-32 mph in rough seas (5-7 ft) the motors cavitate badly.
I spoke with fountain, and they suggested 4 blade 20, or 21 pitch props. Would love to hear your suggestions. Thanks, Matt S.

There are large diameter 4 blade props made specifically for what you're doing. The other thing is to look at the set up. Which side is the counter rotating lower unit on? What's the toe-in set at?
