Overheating

I have a 1997 yamaha p60tlhw 2 stroke. Put a new water pump kit in 5 days ago. Brought to the lake and has great stream coming from tell tail and increases as throttle up. Ran wot all the way across the lake, ran awsome. Stopped and set in neutral for a few minutes and I noticed steam was coming from tell tail and no water. Motor died . So I let it sit for an hour, started right up, and great stream from tell tail. Wot all the way back and seemed great. Parked it on shore and let idle, engine got too hot to touch but still had good stream.. took thermostat housing off and took Stat out, stared motor, again great stream from tell tail but no water at all coming from Stat housing.. any ideas why it's doing that but still have great water stream from tell tail?

since it is not filling the block at low RPM, you need to find out where the water is going if the pump is pumping as it should
Make sure the pump is pumping as it should.
replace the pump housing if any signs of warpage or other problems.
make sure all gaskets and seals are in place so that enough water gets up to the power head to fill the block at low RPM not just high RPM.
possibly a chemical flush ran to remove as much deposits as possible.
I have read Ridlyme marine descaler works, but I never used it myself

if that does not fix your problem, then taking apart to manual clear the passages up would be called for
