Trash or Treasure..??<br /><br />Where I was raised(Downeast Maine), if you caught a "Horned-Pout", You'd cut the line,+ throw them on the bank to die..........<br />Here in Northern New York, The Lake,+ River banks twinkle in the spring with camp-fires of people Trying to catch "Bullheads".....<br />Fire Dept.s have Bullhead Feeds to raise funds....<br />BTW, Bullheads,+ Horned Pout are the Same fish.......... Go Figure........<br /><br />Carp ?? There's a whole New fishery being exploited up here on the St. Lawrence River.......<br />British folks are Flocking to the riverbanks in search of Carp.... Tournaments... Charters... Complete Vacation Packages...... Go Figure......<br /><br />As for Eating,??? In any given year, I fish both Hard,+ Soft water......<br /><br />Ice fishing, any Northerns, Bass(out of season here), Trout(Brookies,Lakers,Browns, or Rainbows),+ Perch, Go back down the Hole.... Unless it's a Money Fish in a Derby....<br /><br />Winter Eating for Me is Walleye, or Burbot.....<br />(Burbot run in Black River Bay in late Feb,+ early March.... Nasty to fillet, Very Slimey, but Very Tasty.. Much like Walleye, large flaky white meat)<br /><br />In the Summer, Trout(Browns, Lakers, Steelies), Salmon, Northerns, Muskies, Bass, Perch, Bullheads, Catfish, Eels, Carp,+ Most Everything Else goes back Overboard.........<br /><br />But, I will break out the Fillet Knife for All legal Walleyes.... And, All the Sheepies that come over the transom............<br /><br />Filleting a Sheepshead is pretty straight forward... After the fillets are on the board, take the time to remove All of the Darker lateral line meat... What's left is an Excellent flakey white meat fillet.... Much like Walleye.... Matter of fact, I've converted several people by mixing Walleye,+ Sheepie fillets at a cook-out.... Nobody could Tell the Difference......... :D <br /><br />BTW, Sheepies also have rather large "Cheeks"... Two of the tastiest morsels know to Me......<br />And, There's a "Pearl" in their head, just forward,+ above the Ears, in the center of their Head......................... ;)

I remember growing up in Cleveland and catching sheepheads in Lake Erie. Uncle use to smoke them with apple wood, tasty!!! Speaking of the "Pearl" have you ever heard the noise of a sheephead when you pull it out of the water? That is the stones rattleing in there head,weird. Up here in Alaska we call burbut poor mans halibut, but nothing beats a fresh Sockeye for taste.

Largemouth & smallmouth bass are actually in the sunfish family (Centrarchidae), same as bluegill and crappie, and taste pretty much the same.

Do they really? <br />I never knew all you mentioned were classified as sunfish. <br />Thanks for the tidbit jtex. Maybe I WILL keep that bass next time.... <br />I've caught quite a few big bass this year but have thrown them all back. Gotta leave something for those guys with the $10k boats to catch...... <br /><br />I can't recall the last time I've eaten a bass. I've been out of the sport for so long. I stopped when I was around 16 and just now rejoining the ranks here at 32. <br /><br />So be warned Mr. Bass, if I catcha... I'm gonna eatcha ...

White perch... they are very mushy... even iced down..... Blah!<br /><br />Gobys... they get their gullet slashed... no good for nothing... they are egg eaters and the product of ocean going vessels dumping their bilge in the Great Lakes illegally.<br /><br />Funny what Bondo says about Sheep. On the coast of Virginia and North Carolina they kill for what they call Croaker. And I swear they look like Sheep... even make the same noise... but they are not as big. Ive heard of people cubing the Sheep fillets and marinating in the imation crab juice.

Skunk-ed, one thing about bass, they aren't as particular about what they eat; I prefer the taste of crappie & bluegill, but bass are still better (IMO) than white & striped bass ("true" basses). They (largemouth fillets) don't have the red stripe running down the lateral line & don't have that gamey flavor. The ones up to 3 lbs or so are better eating I think. I've never caught a smallmouth.<br /><br />Most of our lakes have "slot" limits - under 14" or over 18" (or 21" in some lakes) are legal. They do that to thin out the population of smaller fish to facilitate better growth rates. I've found 12"-14" bass are big enough to provide good fillets. I'm learning to release the "overs" (over the upper limit) but it's tough sometimes, being that I grew up in Louisiana & was taught that any fish boated big enough to clean was destined for the dinner table.
