When we got our first microwave in 85 I vowed that I was going to learn how to cook with it and NOT be like all of our friends and just heat or re-heat with it. <br />In the first 2 years I must have RUINED enough food to feed a family of 4 for 6 months!

<br /><br />Had two microwave and for 2 years thats almost all I used for every meal.<br /><br />I use only corn beef hash made from scratch but got the idea from this recipe. Even buying the smallest peice of corn beef it usually makes about 6 meals so I vacum seal and freeze the left overs for this recipe. <br /><br />
Baked Eggs on Corn Beef Hash<br /> <br />1 can (12 oz) corn beef hash<br />4 eggs<br />4 tablespoons shredded ceddar (sharp) cheese<br />salt and pepper to taste<br /><br />4 servings<br />prep time almost none<br />Cook time 10-16 minutes<br />Note 1: With a newer microwave cut cook time almost in half. This book was written in 1985<br /><br />Divide the can of corn beef hash evenly between four 4-inch micro-type custard cups.<br />With the back of a spoon, make a hollow in the center of the hash.<br />Use HIGH cycle and cook 5 minutes. <br />Break egg into the hollow.<br />Pierce egg yolk carefully with a toothpick.<br />Sprinkle each egg with 1 tablespoon cheese.<br />Cover with paper towel.<br />Use [7] cycle and cook for 5 to 6 minutes, or until egg white is nearly opaque and hash is hot. <br />Let stand, covered, for 1 minute before serving.<br /><br />This makes a quick and easy breakfast or dinner.<br /><br />Note 2: Pierce each egg yolk twice BTDT many times in the early days with yolks exploding! <br /><br />

<br /><br />Note 3: Use lower power setting when placing CD in Microwave. Same light show but doesn't leave order in cooking machine ! yes Yes YES BTDT too !<br /><br />

<br /><br />On a techie note. Using a lower power setting doesn't mean if you are using a 1000 watt microwave and you pick 50% power level that you are using say 500 watts. Its just 1000 watts with a cooling off period between bursts of RF so the CD/food doesn't heat up! Same light show but in bursts!
