Not to rain on the parade but that type of transom bracket is extremely hard on the transom and will eventually twist it and possibly crack the outer skin plate under continued use...especially in harsh weather and rough water.
Without some sort of reinforcement to the stringer(s) like the center one in your photo your going to damage the hull eventually. Why not sell the 25" and get a proper 20" mid model? Why not disassemble the motor and change the mid to the correct one?
Structurally you have weakened the transom and uprated the engine at the same time...both recipes for disaster. Don't get me wrong your construction technique is OK, its the engineering thats faulty.
