I repaired the jabsco manual toilet similar to whats pictured here and when I removed the pump, a lot pf water/RV antifreeze came out of the discharge hose. I was lucky that no poo water was present at it has been flushed but if I ever had to do this job down the road, I want a valve between the holding tank and toilet. I’ve sourced 3 options: brass, stainless, or plastic composite full port 1.5” ball valves.

Thats where I’m stuck. Do I go brass, stainess or composite? Which is going to resist the waste water and odor chemicals the best?

You can't go wrong with brass. It'll last for a very long time. I've seen composite types, they seem to get very stuff and hard to move. As with any valve, you should exercise it occasionally.
