1995 sump was pressed tin. 2005 is cast aluminum.

Dont forget the marine head gaskets, brass core plugs and marine vortec intake manifold. You also need the marine circulation pump

I have all that already off the cracked motor I pulled out already machine shop is transferring over internals to new block but my concern is wiring harness and the oil pressure sensors as well and if I’m going to have to change any of that

Just use the new engine as the core. Transfer EVERYTHING from the old one.

you dont transfer the internals, you simply use the long block. transfering internals requires boring, new pistons, bearings, etc.

get the aluminum oil pan, the harness from the old engine will mount up fine to the new one since you are using all the external parts. same animal, different application (gaskets, freeze plugs) i did the same thing last year, but i bought a used s10 engine, swapped the gaskets and plugs and dropped it in, zip bang boom. but my replacement engine already had the aluminum oil pan.
make sure you use the marine dipstick tube, or youll never be able to change the oil

Well I have had a few issues the pistons weren’t in good shape but the truck motors cyclinders were too big for the marine pistons so no big deal I’m ordering a kit that comes with a new cam and piston rings and lifters and all that for 500 all marine for the 03 block now my question did you run into any issues when redressing the s10 motor?

You shouldn't... Just remember it's a vortec engine, so the non-vortec (1995) intake manifold will not fit, use the 03 intake... And get yourself a Merc genuine dipstick and tube....

First time I've seen this mentioned...is that just for ease of removing oil?

Yep. If you don't, you need to drop the oil in the bilge. Did that once, took me weeks to get the bilge clean again.

FWIW, I drained the engine oil into the bilge once, huge mess... After that I secured a large black garbage bag under the engine (with a bungee cord strung over the engine) to catch the engine oil. Crack drain plug, set up bag, reach into bag and remove plug, drain, reach into bag and install plug, carefully remove bag from bilge so oil doesn't drip all over the bilge, seats, carpet, trailer, driveway, etc... (I have a drain hose that goes out the garboard drain now, and don't have to worry about all that mess.)

That said, I would use the proper dip-stick tube as mentioned.
