Level mark for live well?

[1970 Chieftain V]

I just aquired a 1970 Starcraft Chieftain. I want to remove a cabinet and put in a bait tank. What do you use for the level mark? The top of the cabinets that are already installed appear to be parallel with gunwale. Is the gunwale usually level when afloat?

Thanks for your help. I will probably have a few more the more I start to repair or replace stuff.

parallel, when afloat. nothing is level as the slightest movement chances level, it's a boat.
