Just bought a smoker...........................

I just bought a smoker. Last week I smoked a couple of Northerns I caught ice fishing, and yesterday did a beef roast. Let me just say it is absolutely mouth watering.<br /><br />Anyone else smoke stuff?.....What have you tried that worked out well?

You smoked a few Northerns just because they were ice fishing? What do you have against canadians?

I bet it aint messkeete :D We have this wild hog problem down here, I killed one that weighed about 25# on the hoof, I always saw the pictures of the litle pig on the spit with an apple in its mouth, so I took a cue and smoked the whole pig, I added apple juice to the water in the smoker and basted him in apple juice 3 times while smoking for 8 hrs. It was skrumptious. :D

I didnt say that frog, but I dont like the little bitty skinny ones, maby kinda full figured ;) :p

I have been using mesquite.....but I have some cherry that I might attempt.<br /><br /><br />A pork butt or a ham will definately be going in this weekend.

Alder for fish / poultry...<br />Apple - pork and game...<br />Hickory - pork shoulders and ribs<br />Maple - poultry, pork & seafood<br />Oak - beef or lamb.<br />My favorites are smoked pork chops and smoked wild turkey.....delicious!

<br /><br />It works like a charm. One year I did 200 lbs in it and then vacuum sealed it. I ate smoked salmon and fresh fruit for lunch every day for a year. I've got to get more salmon but the salmon fishing in the northwest is real poor right now ( seals, el nino, no krill in the ocean, etc., etc.)

Some of those homemade sausages would cook up nice in there.<br />A whole pork loin is good.<br /><br />Partially salt cured chicken is good.<br />Whitebass smoke up good.<br /><br />For thicker cuts of meat, you need to smoke at low heat ( 140-180*).<br />Then wrap in foil and turn up the heat to make sure it is cooked thru.<br /><br />What is your heat source, coals, hotplate, or propane?

Nice smoker Quad Dot!<br />Been using a little chief for the last 20+ years.<br />Always a two step process with thick meat and birds.<br />Last summer we bought a upgrade so we could also turn up the heat and finish off at the same time like roscoe said.<br /><br />

If you're cooking butts, try to hold grate temp to 250*. Cook until internal temp of butt is 195* or a little higher. If you're wanting sliced pork rather than pulled pork, cook to about 180*. You can get Taylor thermometers for $16.94 from Amazon. Buy 2 and get free shipping. You'll need 2 anyway. Apply a rub of your choice to the butts the night before, however, I just use salt.<br /><br />

<br /><br />No peeking and no basting. Everytime you open the lid, it takes a while for temp to stabilize. You can put apple juice or whatever in the pan, but it just smells better - adds nothing to the meat. The purpose of the water is not to keep the meat moist, but provide a heat sink. Lots of folks use sand instead. Clean-up is easier.

Nice smokers,i love to smoke.im going to try to build something like links except big enough for a whole hog.<br /> Braxtons right on we have beer can chicken at least once a week here.try using mustard and cajun seasoning on your butt with a little apple cidar or juice.

got smokers like both of those, and others as well. low and slow, at least 5 kinds of wood, and to finish place meat in an oven bag! holds in all those juices. now I'm gona have to BBQ this week!!!
