Jet boat questions

Hello I have several questions regarding a new to me jet boat

boat is a 22ft aluminum river boat center console with a Hamilton 212 jet and a 350 chev motor efi

1. The steering is horrible Has anyone installed a hydraulic unit on a jet drive?

2. what weight oil would you recommend for this motor in the summer and in the winter?

3 it has a FWC unit and I assume you can use the same coolant as any car

4 considering installing a stereo does it need to be a marine application?

About the only part of that I can answer is , no it dose not have to be a marine grade stereo, you can use any but it last a lot longer if its out of the weather.

Also Ive been inspecting this boat a little closer. I can see some black residue or soot below the exhaust manifolds and above the plugs. I assume that the exhaust manifold gaskets are leaking. It looks like an easy fix assuming that the manifold bolts dont break or am i missing something?
