I see so many threads asking how to disable oil injection because they are afraid of failure. Instead of going through all the trouble of disabling it, why can't you just add premix fuel in the oil tank as you would the gas tank? Can this be done or is there something that I'm overlooking?

What trouble??
15 minute job.Well,maybe 20.

Can't speak from experience as to whether any problems may incur if adding premix to an oil reservoir, other than the fact that many are mounted inside of a console or other topside enclosure and could pose a fire hazard issue and the float for the reservoir alarm may not be gasoline compatible.

However ,when disabling the vro ,there is no need to continue flow of any fluid through the oil circuit and oil portion of the vro pump, an thus would be no need to fill the oil reservoir with premix.Only thing you would absolutely need to do is to blank off the oil line and disable the alarms by simply disconnecting the plug-in leads.
