How do I manually start my electric start motor?

I have a 30hp Evinrude, model E30ELETA, with no ignition. I just want to give it a pull and make sure everything starts and runs. I know it can be done, I just want to know EXACTLY what I'm supposed to do. After it's running, how do I turn it off? Do I just unhook the gas? New to all of this, so any advice is greatly appreciated. Thanks in advance.
