How do I know if my boat is trimmed properly?

I have an 86 Bayliner 1950 cuddy, with a 2002 Mercury 125
I don't have a trim gauge
and I'm always adjusting the trim on the motor
But I never know where it really should be
Should the boat be level when on plane?
Should the motor be level when on plane?

Likely if you are over trimmed the boat will porpose or the rooster tail is higher than the motor cover. if under trimmed the spray from the sides of the boat is about right beside the driver and the boat will seem to plow through the water and may even try and bow steer!
