I want to replace my steering wheel for my Bayliner Cierra 2855. Is it a pain? Will I need a puller? Or it a take off a big nut, buy and replace?

Loosen the big nut a little to make some clearance between the nut and wheel, then yank. If that doesn't work, use some of your favorite liquid wrench stuff, soak a while and try again. Still stuck, wedge your knees under the bottom of the wheel and yank on the top. Tapping the shaft with the nut protecting the threads during the knee wedge helps on tough ones.

It's important to leave the nut on the shaft to keep all your teeth. :D

If the boat sits in the elements, I have come across wheels so corroded to the helm shaft that a sawzall was needed, followed by new helm and cable and new wheel

Mine (same model) was extremely hard to get out also. I took out the nut and used PB-Blaster generously and let it soak over night. Take a punch and hammer on the steering shaft few times to loosen it up. Wedge you knee under the steering wheel and use your hands to give the wheel good shake and pull. Repeat as needed, it will get out eventually.
