extremely hot tell tale

the tell tale temperature has been extremely hot. there have been no alarms from the two thermostats. after a long day fishing and running hard the trottle cut out like i pulled the trottle down to neutral and i didn't. it only happened at full speed. after replacing the water pump/impeller the water still spit out really hot even though it took a little longer to get hot.

how do i check if the thermostats are good?
any other ideas. water pressure gage...?

The thermostats just control the lower end of the operating range, the stats open at 143 degrees, the over heat sensor in the head, (usually starboard head) goes off about 243 degrees.
The stats are only about $10 each, so change them. Water pressure guage is a good idea.
I don't think the cutting out of the engine is connected to the temperature.
