exhaust gaskets

Just had to put in new starter on a chevy 350 inboard and I had to take off exhaust to do it. Now that I am getting ready to put the exhaust back on I am trying to figure out which gaskets between motor block and exhaust are best. Copper stainless or what was in there fiber with no metal. What do you guys use?. Thanks for any help. PeteJ
