Re: Easter Dinner??
Here in Newfoundland we have a traditional Sunday dinner. It's called Jigg's Dinner. It's potatoes, carrots, turnips, cabbage, turkey or roast pudding, peas puding, and salt beef.
Its made by boiling some of the salt out of the beef but not all. After the water is changed its a bag of yellow split peas is added to the same pot. Then the turnip is sliced and added, then the cabbage is quartered and added, after that is the carrots, and finally the potatoes. Each is added at approx. 30min intervals. When the potatoes are finished it is all done.
The roast or turkey is made so there is gravy. the vegetables are whole or as indicated. There is no mixing or stirring. It's not a stew. As each vegetable comes out it is set in its own dish. The peas come out of the bag and are mixed with some butter, and pepper until smooth and creamy (Similar in consitency to mashed potatoes). The turnip often is mashed, sometimes its left as slices, with a very slight sprinkle of sugar to take away any bitterness. Potatoes are left whole until served. The cabbage has the heart taken out of each quarter and is sliced into bite size pieces. Then all of it is set out in the kitchen to be served buffet style. Each person takes what they want.
It may sound odd but it is actually a delicious meal. A Newfoundland delicacy. Just ask any Newfoundlander.
