I didn't see in your brake replacement that you changed the hydraulic wheel cylinders...
-- and even if you did, it still may be the culprit. The pistons in older cylinders are subject to hanging in the cylinder because of rust. Piston comes out, won't retract back...
If for any reason a new one is letting ANY water past the rubber boot, or if you have any water in the brake fluid, it only takes one trip to the lake to have the piston stick on the second trip. Went thru that nonsense with the Sea Ray trailer about 15 years ago..
