doing inside boat in finished wood

I have a 1960 lonestar aluminum boat i want to do inside with finished wood and aluminum i was going to use thick plywood then cover with thousands of popsicle sticks kinda like a brick pattern i use to make jewelry boxes and stuff out of them and the look is great ill show pictures if i ever figure out how to add attachments on phone but my question is how can i seal the wood after finishing i know ill have to use glue that isnt waterbased but was thinking what kind of clear would i use im going to do sections that will fit tight so i can do out of boat i dont want the wood color to darken really at all any info on sealing wood be great i also thought about doing wood then aluminumpiece then wood and so on kinda how they do beds of old trucks hot rods thanks for any info or any links to people that have did inside of boat in wood outside will be shiney aluminum no paint

Will regular clear coat work i plan on putting atleast 10 coats or is there something better that wont let water in and shiney

Marine varnish or exterior spar urethane.

Ok thanks i bet its like 75 a gallon but i need something good another option i thought of was white oak or cedar on inside too. Im basicly looking for some old wood in good shape that i can use inside boat if i dont end up doing what i planed on that varnish do u think ill have to lightly sand between coats and maybe put polish after finishing
