Do you guys ever BBQ on propper coles? I know that you guys use a BBQ that works with gas / or with charcoal blocks .... that is basically non-existant here ... Braai as we call it (BBQ) will always be done with a nice couple of wood logs on the fire, sipping a couple of beers till there is nice big hot coles to tan a couple of steaks or tjops (lamb cuts) ....... and the world known "boere-wors" (sausage) .....

Still doing it the "old-fashioned" way here in the UK on the two days when it's nice enough to have a barbie 8)

Actually that's not strictly true, thanks to global warming we've had a great summer and it's only just turned too cold for bbq now in the past couple of days...............in fact I like the change in weather so much I'm thinking of using leaded gas again in my car d:)

Here in America, there is a slight disagreement between the experts as to what is called BBQ and what is called Grilled meat.
It appears, from the "southern American perspective" that you are talking of grilled meat.

Hell if it tastes good i'll eat anything.

Exactly. For example - when I BBQ two 10 lb. butts, it takes from 12-14hrs, low&slow. Actually I'm smoking them. Meat done on both bullet and offset are actually smoked, but most here call it BBQ. BBQ is actually done over a pit using coals from wood burnt apart from the pit and shoveled in the bottom.

All competition BBQ is done using bullet or offset because pits are not usually portable. Also, the organizers usually have a prohibition against open fires.

I own both a charcol and a gas grill. They each have their plus and minus. Gas Heats fast, burn even and tempature can be controlled. Charcaol has flavor and you can cook for a long time slowly. I guess if I had to choose I would pick gas first. Since I have both i dont really have to make the choice so .......

danpemby- heat can be controled with charcoal too, just takes practice.8)

I have used a gas grill once, we always use charcoal here (but no lighter fluid, charcoal chimney only). The food tastes better to me.

Gas is just too damm convenient - I can get home from work, flip it on & be cookin' at 500F in 5 minutes. I wish our lifestyle allowed the time for doin' it the right way, but a guy's gotta do.....

[colour=blue]I've got two BBQ's on the rear porch - a charcoal grill and a gas plate but when we go camping it's charcoal and underground oven.

Charcoal chimney can also be used with wood chunks also.
Clean way to get things going.
Tried gas once also.. might as well of cooked in the kitchen.

at home = gas
At church = charcoal
boy scout trips either gas or charcoal w/ the occasional wood coals. But that is not as often as it should be.

I fortunately have more mesquite than I could ever use up.

I never tried anything that could match the flavor or aroma of meat grilled over mesquite coals. Beef, pork, chicken, goat. . . whatever.

Charcoal at home, tailgateing, and campimg for me! Although gas is nice and quick, the griller (me) must have time to drink a few beers while the coals are burning down. Isn't that one of the cardinal rules for outdoor cooking?
Never had goat, but ostriech is yummy! Red meat that's almost like beef believe it or not!

Cheers for that! I need help with the pronounciation though...........is the "w" in wors pronounced as a "w" or a "v"?

Must admit him and I didn't get on well at first, he's very "in your face" and quite blunt. I did a debriefing and he just constantly interupted and disagreed with everything that was being said so..................I invited him into the car park so that we could settle it "man to man". He seemed to accept that and explained that it was because "he's South African and we're all like that". I replied that if we're talking about stereotypes then I'm Scottish so I should be drunk all the time and head-butting people I don't like"......whilst maintaining eye contact with him d:)
Since then we've been good buddies................o:)

Also worked with a South African in the Coastguard when he was on a swap visit. Man he was crazy, with a capital "K" :^
He showed us how to surf-ride the RIB on it's tail to get off the beach faster.............my boss at the time nearly had a fit when he saw the way we were driving the boat 8)
Cool bloke, just couldn't keep up drinking with us Scotsmen

Hahahahahaha, ... the "w" in wors would be pronounced as "v" you are quite correct .... we are not all "in your face" and blunt ... maybe crazy though :) but we like our brandy and coke .... hahaha .. I would say that we are always friendly, never aggressive or anything like that ...... the guy that surf ride the rib ... sounds like me hahaha .... I would still love to drink with a Scotsmen ... see how far I get :)
