do I need a different prop.

I just bought my first boat in January and put it in the water for the first time. It is a tahoe 216 21' deck boat. It doesn't seem to get out of the water fast enough to do a deep water start on one ski. The water is only 44 degrees right now so didn't try it. The boat has a 270 hp. 5 litre with 1:65 ratio stern drive. the prop is stamped with 48 16318 21p. I'm guessing that is a 21 pitch??? I live in Denver 5280' Can anyone give me advice on what prop to use and what effect it will have on performance? The boat would cruise at about 40mph with my family of four in it.
