I'm having a difficult time trying to forget the image that popped after reading that.i grind my own butt meat, good amount of fat.
I made moose sausages 2 weeks ago. I used 30% beef fat by weight. Turned out pretty good if I do say so myself! Used beef just because I like beef better, pork would be fine too. Local supermarket meat room saves all their beef fat trimmings for local commercial sausage maker but will sell to anyone....bonus! This was 100% fat, no red meat in the trimmings. Whatever you use, make sure you mix very thoroughly, esp if you adding herbs, spices and salt.Back again, finally getting ready to do this. Cut up a chunk of deer and will grind the pork tomorrow.
What ratio deer>pork?
funny - as I was grinding it all today I thought maybe I should check on this thread to see if anyone updated anything and then I thought of the words I used and laughed out loud. I grind beef roasts.... I kinda like my butt right where it is.....i grind my own butt meat, good amount of fat.
