Where would somebody get a custom dash console made?

are you looking at the pod itself, or the gauge panel?

most people on here make their own pods, etc

A high end car audio place will probably have experience making custom fiberglass speaker enclosures which would my very similar to a boat dash. Might be something to check out. Great Lakes Skipper . com has overstock OEM dashes from new boats and may have something close enough for you to avoid custom.
