I'd even be tempted to go for a 13" pitch prop to get much better acceleration. As long as the boat will do 20 kts (23 mph) it should be enough for learning to slalom ski on one. Once your crew has the hang of it, go up to a 15" prop for better top speed. And all who have suggested using the lowest possible trim position are correct, it will help with both holeshot and avoiding ventilation in the turns.
