Can someone tell me what these wires are for?

My wiring harness on my Mercruiser 3.0 has these two wires coming out of it, one brown and white and one black. According to the wiring diagram I think these are for trim senders? But with these unplugged the trim still goes up and down, and I don't have a trim gauge....I'm sure I'm missing something here.

That's for setting the timing. You need to install a jumper I believe to put it into timing mode if you are hitting it with a light and setting your timing. Forgot the actual procedure, but if you look up timing procedure, it was pretty easy.

No. The timing shunt wires come from the ignition module on the distributor

The wires in question are for the trim sender that the guage (which OP does not have) reads

^^^ The trim sender wires for the gauge you don't have. Only for gauge, does not effect the operation of the trim.
