I thought about that too.....but I have seen a few articles out there that suggest a smoked sirloin can be great. The sirloin I have actually has a little marbling and doesn't seem excessively lean.

My thought was to smoke it low for just a couple hours and sear it nice and hot and quick on the grill to keep it medium/medium rare

Well, there's only one way to know for sure my brother. Let us know how it turns out!

Made some venison hot sticks yesterday. Wonder how many people still have and use these old cast iron stuffers. Not sure how old mine is, buts its been in the family forever. Only date stamp is from a patent in the 1860's.

that looks good!! im not that advanced with my bradley, but i did smoke a pound of sharp cheddar last night.....now its the two week wait to try it!!! lol

Nice Pony...those sticks sure look good...the only way I'd know for sure is if you send me a few to try out?

What kind of smoker are you using? Looks fairly cavernous?

that looks good!! im not that advanced with my bradley, but i did smoke a pound of sharp cheddar last night.....now its the two week wait to try it!!! lol

I learn something each time I smoke something. This time I learned that I need to add a little bit of fattier beef to the venison if I am mixing with the proportions I did. I also learned with this smoker to make my links a little shorter and some of the longer ones on the left side of the smoker got a little dark as I put a larger smoke box on that side.

Here's my big one (80"H x 24"D x 18"W) I lovingly call it The ElectricFrankenSmoker...Converted Cooker/Warming cabinet ($10K when new, $50 to me from a government auction) this one is 5,500 watts, 220V has all computer controlled heat/fans (4), can cook/smoke for 12 hours at a time and hold temps (100˚-325˚) indefinitely! I have to roll this one out front for smoking as I keep it in the garage. I use this one for smoking my peppers, almonds and large quantities of meat (can accommodate about 360lbs of meat at once.)

My little one that I built from a SS hospital cabinet...called Frank Jr, 1/2 the size, just as ugly! This one has a PID controller, with Solid State Relay (SSR), low voltage converter with a 12 volt computer fan keeping all the electronics cool. Bought a 1,500watt heating element from a griddle. Installed a E-Frame fan motor on top that has a 2" aluminum fan blade keeping temps and smokes even. This one is 110V...it's my daily one for brisket, butts, jerky, ribs, salmon, and cheese. I load this one up for long weekend camping and boating.

What I learned on...New Braunfels Black Diamond heavy gauge steel side fire box. Bought used off CL for $50, sold for $125 after mods

I modded this one with at cooking level thermometer, basket for wood/charcoal, new oak tray/handles, aluminum flashing for bringing the chimney down, heat shield and black stove silicone for sealing...everywhere!
