I fished the middle Detroit River on Tuesday, and folks coming in from the Trenton Channel area were coming in with limits of White Bass. Another week and they will be thick mid-river.
As far as eating them, I found that bleeding them out immediately, then putting them directly on ice does wonders for the taste. Don't let them slosh around in a 60 degree or warmer water in the live well for a couple hours. That and removing the lateral line are the keys. If you've never seen the zipper method for Filleting, it does a great job on the lateral line. Take the skinned fillet and at the tail end make a 1" cut on each side of the lateral line Grab the top of the cut and the lateral line and pull and then repeat for the bottom of the fillet and you have a quick easy removal of the lateral line and two clean pieces of meat.
