Stunning boat BTW, Nice work!

Your best option will be to add a good length of chain on a fluke anchor.
The fluke, like most anchors, are made for zero degrees from horizontal, of pull. A length of chain will asstist in keeping the tongue of the anchor low to allow it to dig into the bottom. It should work well in heavy mud, sand, and the tips may catch the shale(not the best).

If it was me, I would have a 9 pound Danforth Standard with 10 feet of 1/4" Proof chain, a shackle/swivel and 150' of 3/8 rode. It wont take a lot of room and it should hold tight on most bottoms.

I've kinda come to the conclusion that a chain and longer rode is what I need ("that's what she said!"). As I stated previously, this chain was advertised as no chain required...no I realize while technically correct, in execution wrong. I'll place about 8' of chain on and see how she does this weekend.

BTW, thanks for the compliment on the boat...being 30 years old she's showing her age...I've updated the interior with new helm seats, vinyl and new gauges (GPS speedo, yeah). Had the motor rebuilt about 4 years ago. But most of the boats condition goes to the PO (my good buddy's dad) he owned it since 1984 and it was almost always garage kept and fairly well taken care of..used often in the 80's-early 90's, but once he retired, only a few times a year. The cool thing is every time I go out people comment of the red metal flake and "what a nice boat" it is.
