I think that the chain attached at the bottom of the anchor, with a ziptie/break away link at the top is going to be the best way to recover, basically any way to pull the anchor from the bottom rather than the top.

That Columbia anchor i think would be hard to find a spot for it on the boat, and it would probably get hung up due to hits arms/claw.
Normally yes, here most boats have them mounted in special carriers to keep them out of the way

The OP is in a lake, your not going to find many trees (as in stumps) in a river. I have never got my 3 prong mushroom anchor hung up in the river (Ohio, KY, Cumberland, Green and couple others ) on my Rinker.

The OP also has a Mumba, and don't see drilling holes on the bow
agreed, we do actually have quite a bit of sunken logs and such around here. not necessarily standing but sunken along the bottom.

I honestly missed the Mumba part and yeah, that probably wouldn't work.

I'm another fan of box anchors. The store well in a boat like yours and hold well in most conditions. I've found I can work them out or tree hangups.
For my own, I'm not using it for overnight as it's just for temporary stops. Overnight I'd use it and a shore spike off the stern. A line off the backside of many anchors to a float gives you a way of releasing most anchors that get hooked, but it's a pain having more lines and complications.
