We have a Mazda CX9 with a class 2 hitch (1-1/4") that's rated to tow 3500lbs (both the CX9 and hitch are, CX9 has the towing package with tranny cooler.) I'm looking at a Wellcraft 170 with a 3.0, dry weight is a little over 1900lbs, so with trailer and fuel/gear the all up weight will probably be around 3000lbs. That is the max I would be comfortable with but would like some second opinions. What are your thoughts?

I would probably be keeping the boat within an hour or two with maybe one longer trip a year.

you will be fine, sounds like you have #500 worth of head room which will account for the stuff you throw into the Mazda

The numbers seem to fit, you should be ok, make sure your trailer brakes are in working order.
