A couple or so volvo-penta 5.0G questions.

I have a 1999 Crownline boat w/ 5.0 (Chevy) engine and TBI injection. First,how long can I run the engine out of the water before water pump damage occurs? Also,what are the correct fuel pump pressures for both of the fuel pumps?Lastly,is there a "Set timing" connector I need to disconnect to set the timing as there is on my truck? Thank-you!

As long as you have the muffs and hose hooked up you could probably run it until you were bored or out of gas. Without that setup maybe a few seconds before the impeller is toast. As for the timing,
http://forums.iboats.com/showthread.php?t=271407 all in the adults only section at the top of the forum (contains a wealth of info, a must read so to speak). As for the pressures, 6-8 on the low pressure and 29-31 on the high pressure if memory serves.

About 5 seconds.

First, don't try to set timing in the link given by gbeltran, that is for carbed engines only, not TBI.

For your system, if you don't have a diagnostic computer to put the engine into service mode, you can use this method.
