92 Nautique Engine Stall at Same Temp

We have a 92 Nautique with Ford 351 that invariably stalls out when engine temp hits 160 degrees. Local dealer has had it three times but keeps throwing parts at the problem with no results (other than selling a part). Engine is getting fuel; runs great until it hits certain temp. Stalls out; restarts after waiting a bit, but difficult to keep going at low RPM. Really frustrating! If anyone has seen this before and has an idea, please chime in.

How long ago was this motor given a Full Service,+ Tune Up,..??..??....
