72 gulfsream fuel?

I’m the recent owner of a 1972 Gulfstream 165 merc that is very clean with 240 hrs. It had been sitting for a while so I’ve had to replace the carburetor, alternator and a few other minor repairs. It does great and then seems to fall on its face, sometimes after a long cruise and sometimes during. The motor bogs down and will die if I try to give more throttle. It can sit an hour and run perfectly for a while again. I put a clear fuel filter on when I replaced carb and it’s collected some debris but not enough to restrict fuel flow. Could the stale fuel in the tank be culprit? I’ve put 25 gallons of 92 octane in and used more than half of that. Thanks for any advice in advance 7E114E26-E5E2-4019-B226-253CD505C808.jpeg
