I'm only going to go in freshwater in this boat.
What size and how many magnesium anodes should I mount to my hull? I figured I'd put them under the water line on bare aluminum skin of the transum.

I only have one zinc on my motor and replace every couple years. I would only put one on and keep an eye. Unless you got a major issue or leave it in water near other boats that get shore power you shouldn't have an issue. Trailer queens like ours don't have the same risk.

I removed the rat's nest. I'm going to go with rechargeable LEDs so I don't have to run any wiring for the few occasions I need running lights.

Rechargeable running lights, I never thought of that but makes sense since I seen them on kayaks and stuff. Smart move to limit wiring.
