Your exhaust manifold to riser connection is definitely bad, as you see with the bubbling. Don't silicon those connections. Clean them flat and use new graphite gaskets.
That should solve part of your problem, but there's probably still water getting to the oil.
Did your mechanic keep the heads that the engine came with? I wonder if there is a head gasket issue.
You can test the engine block by blocking off the cooling system and pressurizing it. Then listen for hissing and turn the engine 90 degrees at a time. Listen at the oil fills, carburetor, spark plug holes, exhaust ports. That should locate where water can enter the oil.

NHguy I believe my mechanic used the same heads and block pulled from truck without removing them. I need to put the intake back on before I can do a pressure test. but I'll replace the intake before i do that.

after compression test I'll see if I can rig up a cooling system pressure test

Since the intake is off do a detailed check inside the valley. That's where they can crack. Look for rust trails. Look about 3/4 of the way to the heads along the inside of the water jacket.

But if the block does not show anything I think it's worth a set of intake gaskets to learn if the block and head assembly are OK. Once tie intake is on and sealed all you need to do is block the cooling outlets and add pressure at the inlet.

I'll be doing a magnaflux test to the intake as I cannot seem to find a used intake.

ill inspect the block but I'm confident it is not cracked

next step is to install the inspected intake, new gaskets, compression test, then leak down pressure test.


is it at all possible that this water was taken in through the exhaust via a faulty exhaust flapper? do I need to pull
the leg to inspect that ?

Shutters are at the top of the Y pipe. You pull the exhaust elbow off the top of the manifold, then pull the second elbow out from the lower rubber coupler. You can then see down through the lower rubber coupler into the top of the Y pipe where the shutters are on each side. You do not need to pull the drive to see the shutters.
