I have similar boat - 2004 200 sport with a 5.0. Only differences would be I have a 4 bbl Edlebrock on mine (maybe 240-250 hp vs 220) and my drive ratio is a 1.82. My boat was originally a 4.3 (previous owner cracked block). With the V6 drive ratio I had to step up from a 19" pitch to a 21" pitch to keep WOT at 4900 or so.
Your numbers basically match up with mine and I would agree you should be able to swing a 18-19P 4 blade just fine. Would also think a 21 would work but just be sluggish out of the hole. Depending on which prop I run - I've gotten the following:
4 blade 21" Vensura- 44 Mph, 4900-5000 rpm, 20% Slip, occasionally touch the limiter
3 blade 22" Enertia- 47 mph- 4850 ish rpm I think slip was like 14%
4 blade Revolution 4- 48 mph 4900 rpm - I think slip is 12%, real nice hole shot with medium PVS plugs. Biggest difference on top end the rev4 has enough bite to really trim up and gets ab out 3-4 mph more vs max trim I could run for the Vensura. Engine will get another 300 rpm when really trimmed up and the prop is near the surface.
I would think with the drive ratio differences between our two boats you'd see similar results with pitches 2" lower than I'm running with my jackalope engine/drive. My use is primarily watersports with a full load of people- so with this boat (beamy and heavy) a 4 blade seems to do the trick well.
