2003 115 Four Stroke Impeller Damage Overheat

In an attempt to perform my own service to my 2003 115 four stroke I damaged the oil pan. I then took it to a service person who repaired the oil pan and checked the impeller installation I had performed myself. This series of repairs required the lower unit to be removed and seals replaced.
About a month after I get the boat returned I begin to have overheat alarms. It took some time to confirm the common alarm was overheat but that was confirmed. The service person took a look at the impeller and saw the hub portion, not the fins, was all chewed up. A new impeller was installed, I guess with a belief that I must have done something wrong at the time I replaced it initially.
About a month after getting the boat back, I again overheat. The service person again sees a damaged impeller. Now we are adding a jack plate to lower the motor as he does not believe enough water is getting to the impeller. I can see that the motor is barely in the water when on plane. I am okay to add the jack plate as it will likely improve my performance anyway, but why would I start having repeat impeller damage when I have run the boat in the same conditions for 6 years?
Is there some damage that could have been done to the lower unit when it was removed and effectively rebuilt?
