Awesome post! Thank you. I fully understand the RV vs Cost equation. We have a slide in camper because we like to stay in it and travel with it. Not because it's somehow cheaper! A cuddy isn't the deal breaker (or maker for that matter) for sure.

I'd say start without a cabin, and if you miss it afgter a season, sell and replace. If you buy a decent center or dual console (not a bow rider) OB you will have no trouble selling it in Florida; not so the other way around.
