Does anyone have any idea what each switch is, other than the horn? They are not labeled and it’s my first boat in 40 years and I don’t want to mess it up

You flip each switch , walk around and observe what is on , lights ,blower , bilge pump , wiper , etc . and label . Other choice is to follow each wire to the source and then label.
If you have a livewell, one probably controls that. Depending on the boat, you may have a couple empty switches that go to nothing - for use with accessories you'd install after purchase.
