I just picked up a gently used 230 VBR yesterday, the former owner had passed last year, his son felt the gas tank was about 20 gallons, I put 30 in and the pump didn't stop, Does anyone know How many gallons of fuel my boat will hold?

You should be able to get a glimpse of the fuel tank by opening a hatch or 2 . . . maybe just looking forward from the engine bay. there will be a certification label on the tank . . . it has the capacity of the tank printed on it.
