The instruction for impeller replacement are not in the service manual because Merc service manuals are written for certified technicians, not unqualified owners to do their own repairs. The manuals assume a level of experience by the technician, so 'simple' tasks are not detailed. One of those 'simple' tasks is impeller replacement.

Thought I'd offer a leg-up...

I haven't done much with jets, but yeah, after bending the washer tabs out, remove the nut (probably L.H. thread??? and I think that is one of the things OP is asking about) and then the impeller should just pull straight off. From the photos it looks like the nozzle is already off.

Generally if an impeller needs changing on a jet, so does the wear ring

You’ll need to pull the pump out the back of the boat. Get an impeller removal tool or stick the whole thing in a big vice. Big spanner with a pipe extension on it. You’ll need a new wear ring too.
I presume you mean it’s a mercury 120hp
