I wanted to provide an update for anyone searching this issue... It was such a PIA I wish I had a good resource when I was chasing it.
My issue did end up being water pressure as well. New impeller resolved. It only took like $3k worth of other "fixes" my boat shop was trying to get there.
We are still chasing it! So they pulled and serviced all injectors. Didn't fix it. Next they thought it was due to temp of transmission and they noted it was a little milky. Flushed, replaced, and problem still persits.
