Sutphen sport pacer redo, using 1" ply?

So I have a '72 sutphen I'm looking at, floors been removed, and it looks like the transom is mulch.

anyways, while I was shopping around for my chrysler that ultimately went to the dump I found a great deal on 1" marine ply, cheaper than even thinner pieces everywhere else.. that being said, from pawing around on the internet, it looks like 1-2x6 possibly plywood, now could I fill the underfloor area with closed cell structural foam, and then use 1" ply for the floor? or do the stringers over, foam then 1" floor? and I would be using this 1" for the transom too.. any drawbacks to a 2" transom? I don't know whats inside the transom in this boat, just looking at it for now.. and from what I gather on the internet, these boats are pretty awesome boats. and will hopefully be a worthwhile resto if it winds up in my driveway...
