Won't throttle past 3000 after it warms up

2004 mercury 115 efi 4 stroke.
Starts up, idles great and will run at full throttle until I shut it down to fish for a while. Then when it starts fine and idles fine but won't throttle up past 3000 ish rpm. I've changed the impeller and it has a good stream. Also changed the injectors $$$. Fuel bulb is fine. New gas. New fuel filter. Not sure what's next. Local boat "mechanic " is stumped. So it runs great from a cold engine but when I run it after it has warmed up it has these issues. Anyone have this issue? I'm tried of throwing parts and money at it.

No idea on your specific engine, but EFI motors control the fuel mixture by engine temp, among other sensors. Maybe your temp sensor is bad?

Is the motor in some sort of safe mode? That could indicate some sort of bad overheat sensor.

There isn't an alarm that goes off. I'm not sure how else to tell if it is in safe mode. I did just order a new sensor along with a new fuel line yesterday. I'm hopeful.

Just incase anyone was following this here was the issue. I ended up taking the vst apart which was a difficult procedure on my motor and found that the high pressure fuel pump had come loose out of the bushing or grommet that holds it in place. So I believe since it was just hanging there it interfered with the float.
